Caprese Salad in a Jar
1 cup precooked quinoa (cook on stovetop according to the instructions on the box, can be made ahead of time)
2 cups basil leaves, roughly chopped
1 pint cherry tomatoes, sliced in half
1 cup of fresh mozzarella, cubed
layer ingredients in mason jar with quinoa on bottom, followed by tomatoes, then basil, and mozzarella. Finally drizzle 1 teaspoon of balsamic over the top and seal jar.
